An easy turkey skillet dinner to add to your weekly menu plan

This easy turkey skillet dinner is a unique potato dish that is fairly modest in calories and carbs yet very filling given the high protein and veggie content.

Sweet Potato & Ground Turkey Skillet

Yield = 4 servings

Directions

  1. In a skillet (preferably cast-iron), heat 1 tablespoon of olive oil over medium-high heat.
  2. Add ground turkey and cook for about 10 minutes, stirring occasionally.
  3. Add the remaining 1 tablespoon of olive oil to the skillet along with chopped onion, sweet pepper, and cook until onions are lightly browned- about 5 minutes.
  4. Add minced garlic, diced sweet potato, crushed red pepper flakes, salt, and ground black pepper. Cover skillet, lower heat, and cook until sweet potato is tender- it could take 5-8 minutes. Stir occasionally. If needed, add a little bit of water to help cook the sweet potato.
  5. When the sweet potato is tender, top with shredded mozzarella cheese and briefly put the cover back on so that the cheese melts.
  6. When cheese is melted, turn off heat and garnish with chopped parsley. Serve and enjoy!

Tips

Cooking in a cast-iron skillet is an easy way to add a little extra iron to your diet.

You can add more or less spice to flavor this dish the way you like. Hungarian sweet paprika and chili flakes kick up the spiciness.

To lower sodium further, consider using a reduced sodium salt or salt substitute.

To lower carb content, spiralized butternut squash is a delicious substitute for sweet potato and it cooks faster.
