This hearty salad bursts with flavor from olives and a lemon dressing.

4 steps

  • Mix olive oil, lemon juice, mustard, salt and pepper to make the dressing. Set aside.
  • Toss arugula with 2 tbsp dressing.
  • Arrange arugula on 4 plates. Top with sections of quartered hard-boiled egg, sliced black olives, drained canned tuna and halved cherry tomatoes.
  • Drizzle with remaining dressing.
