Mix olive oil, lemon juice, mustard, salt and pepper to make the dressing. Set aside.
Toss arugula with 2 tbsp dressing.
Arrange arugula on 4 plates. Top with sections of quartered hard-boiled egg, sliced black olives, drained canned tuna and halved cherry tomatoes.
Drizzle with remaining dressing.
