  • Heat a small nonstick skillet to medium then add water and a frozen vegetarian sausage patty. Heat for about 3 minutes then flip patty to continue cooking for another 3 minutes. You might need an extra 1 minute per side, depending upon how browned you want the patty.
  • Spray oil on another small nonstick skillet and heat to medium. Scramble 1 egg and 1 egg white in a small bowl then add mixture to the skillet and cook for about 3 minutes. Flip egg, turn off heat, and then add a dash (or pinch) of salt. Allow egg to keep cooking from the heat of the pan for another 3 minutes or until egg looks cooked to you.
  • While egg is cooking, heat thin bun in the toaster. Mash avocado with a fork onto both sizes of the toasted thin bun. Now add the cooked sausage and egg to make a sandwich. Enjoy!

Most large grocery stores carry vegetarian sausage patties in the freezer section. The nutrition for the food item used in this recipe comes from MorningStar Farms brand. However, the brand available to you might be different.
