4 steps

  • Cook the frozen peas by microwaving for 4 minutes (buy the steamable bag or add a small amount of water and cook in a microwave-safe bowl).
  • Put peas, water, vinegar, and salt in a blender and blend on high until smooth.
  • Chill the soup in the refrigerator for about 1 hour.
  • Remove soup from the refrigerator. Pour 3/4 cup into each serving bowl and top with 1 teaspoon of sunflower seeds, 1 tablespoon of sour cream, and 1/2 teaspoon of olive oil.

This recipe makes about 3 3/4 cups. Each serving is about 3/4 cup.

Tips:
One 12-oz (340 g) bag of frozen green peas contains about 2 1/3 cups.

Sherry vinegar can be used instead of rice vinegar if you prefer.
